Low Carb Breakfast Pizza

If you’re looking for a fun, low carb & high protein breakfast idea, you’ve come to the right place! This gluten free, egg white pizza crust is topped with lots of favorites: Pesto, sautéed kale, sun dried tomato, and mozzarella cheese. Throw on an egg, sunny side up, for a cheesy, delicious breakfast pizza.

Measuring in at just 270 calories, this low carb pizza contains a little over one serving of carbs and over 20 grams of protein!

Per pizza:

The secret to this recipe is Egglife’s egg white wraps!

I should state that I have nothing against regular wraps or tortillas. But, I also support finding healthier and easy alternatives. So whether you chose a white wrap, a whole wheat wrap, an egg white wrap or a corn tortilla, my goal is to provide options so you can make the best choice for YOU.

Like the name implies, Egglife wraps are made of egg whites, so they’re naturally low in carbs and high in protein.  They come in a variety of flavors ranging from original to everything, Italian, rye and southwestern.

Nutritionally, they contain (per wrap); 

  • 25-35 calories

  • 5 – 6 grams of protein

  • 1 gram or less of carbs

  • 1 gram of saturated fat

 

Overall, I’m a fan! And while I still intend to use regular tortillas and wraps, these will definitely hold a spot in the rotation!

Ingredients

  • 1 Egglife wrap (flavor of choice)
  • 2 tbsp pesto
  • ½ cup sautéed kale, chopped
  • 2 tbsp sun dried tomatoes, diced
  • ¼ cup shredded mozzarella
  • 1 egg
  • Salt 
  • Pepper
  • Garlic powder
  • Spray olive oil (or regular oil)

Instructions

  1. Spray each side of the wrap with oil and season both sides with salt, pepper & garlic powder.
  2. Bake at 400 degrees for 12 minutes. Flip halfway through.
  3. Leave the oven on. Spread the pesto across the wrap.
  4. Top with kale, sundried tomatoes and mozzarella.
  5. Crack an egg into the center.
  6. Bake until the egg is cooked to your liking. For just until the white sets and the yoke is still loose, about 15 – 20 minutes.
  7. Serve hot. Enjoy!
