Cookie Dough Baked Oats

Baked oatmeal has taken over social media, and with good reason! Who wouldn’t want to enjoy a healthier breakfast with a cake like texture and taste?

When I first heard of this trend I thought for once, I was already ahead of it. I’ve been eating baked oats for years! Little did I know, these baked oats offered a fun twist on the classic by using oat flour rather than whole oats. By swapping one for the other, the entire dish changed, and baked oats transformed into a delicious & delicate breakfast treat.

Not only are baked oats delicious, but they’re also very versatile. Chocolate chips not sounding good, try adding fresh berries or maybe even nuts instead! Use the following nine ingredients as the base, and get as creative as you would like from there:

  • Unsweetened almond milk

  • Ripe banana

  • Rolled oats

  • Baking powder

  • Egg

  • Maple syrup (or sweetener of chocie)

  • Vanilla

  • Cinnamon

  • Salt


Nutritionally, a single serving clocks in just under 350 calories and contains almost 15 grams of protein. If looking for a lower carb and higher protein option, pair 1/2 of the baked oatmeal with 2 scrambled eggs (305 calories, 22 grams of carbs & 28 grams of protein)!

**Using regular maple syrup adds 50 calories and 15 grams of carbohydrates.

Ingredients

  • 1/4 cup unsweetened almond milk
  • 1/3 of a ripe banana
  • 1/2 cup rolled oats
  • 1/4 teaspoon baking powder
  • 1 egg
  • 1 tbsp maple syrup (I used a stevia sweetened syrup)
  • ½ tsp vanilla
  • Pinch of cinnamon
  • Pinch of salt
  • 1 tbsp mini semi-sweet chocolate chips

Instructions

  1. Add all the ingredients except for the chocolate chips into a blender. Blend until well combined. Stir in the chocolate chips, or save them to put on top!
  2. Pour the batter into a greased baking dish. Top with additional chocolate chips if desired.
  3. Bake at 350 degrees for 25-30 minutes. You’ll know it’s done when a inserted toothpick comes out clean.
  4. Drizzle with additional PB or add toppings of choice!
