Healthy Baked Apples

Baked apples are a delicious & healthy snack! Made with just 6-ingredients this gluten and dairy free recipe is a must try!

I grew up in a town known for apples. In fact, my small town hosts a widely attended ‘Apple Fest’ each year, attracting thousands of tourists. That being said, one of my favorite snacks growing up was baked apples. In an effort to create a healthier version, I experimented with different ingredients and created this (just as delicious) recipe!

The first step in making this recipe is preparing the apples. Please be cautious when coring!

How to core apples:

  1. Slice off the top.

  2. Take a sharp knife and carefully cut/round out the center/seeds of the apple (this does

    not have to be perfectly cut or rounded as it will be filled with the oat mixture provided

    later). 

Once the apple is cored, the rest is easy (see recipe below)!

Have you ever heard the saying ‘an apple a day keeps the doctor away’? Although obviously a bit exaggerated, apples are packed with nutrients and fiber that can help to lower cholesterol, prevent disease, promote bone & gut health and aid in satiety!

Healthy Baked Apples

Ingredients

  • 1 Granny Smith apple
  • 2 Tbsp crushed walnuts
  • 1 Tbsp sugar free maple syrup (can sub for regular syrup)
  • 1/4 cup rolled oats
  • 1/2 Tsp cinnamon
  • 2 Tsp melted butter or coconut oil
  • 1 cup apple cider or water

Instructions

  1. Preheat oven to 400 degrees.
  2. Using a small knife, cut the top off of the apple. Carefully core the apples. Cut about 3/4 the way down to remove the seeds from the center. 
  3. In a small bowl combine oats, walnuts and cinnamon.  Add in the melted butter and maple syrup. Stir to combine.
  4. Place apple in baking dish and fill the apple with the oat mixture. 
  5. Pour apple cider or water into the bottom of the baking dish. Cover apples with foil and bake for about 30-45 minutes. Every 15 minutes,  baste the apples with the cider every 5-10 minutes. Uncover the apples for the last 5 minutes.
  6. Remove and serve hot!
