I for one am big fan of simple, quick & nutritious grab and go snack recipes. If it can be made in under 15 minutes, uses minimal ingredients, and provides me with the extra boost of energy I need, I’m in!
This recipe is packed with good-for-you ingredients like chia seeds & hemp hearts, both of which are a fantastic source of heart healthy and anti-inflammatory fats. The saltiness from the pistachios acts as a flavor enhancer when combined with the sweetness from the cranberries, leaving you with a mouth-watering and delicious treat.

Cranberry Pistachio Energy Bites
Ingredients
- 4 ounces (about ½ packed cup) chopped dates
- 1/4 cup honey
- 1 Tablespoon chia seeds (optional)
- 1 Tablespoon hemp hearts
- ¾ cups old-fashioned oats, powdered (dry, not cooked)
- 1/2 cup shelled pistachio nuts
- ¼ cup dried cranberries
- Pinch of salt
Instructions
- In a food processor or high-speed blender, add the oats and pulse until a powder is formed. The oats should be close to the same consistency as flour. Remove from the blender and set aside.
- In the same food processor/high speed blender combine the dates, honey, chia seeds, hemp hearts and salt. Pulse until combined.
- Transfer the mixture to a large bowl. Stir in the oats, pistachios and dried cranberries.
- Using your hands, roll the mixture into 1-inch ball.
- Store covered in the refrigerator for up to 2 weeks.
