Banana S’more Bites

After one bite, I promise you’ll want s’more!

This super easy & kid friendly snack can double as a dessert and only requires five ingredients! 

PB & fluff sandwiches were a classic throughout my childhood. I remember sitting down with sticky fingers and taking mouthfuls of creamy PB and gooey fluff. Growing up in very health conscious home, PB & fluff sandwiches were the epitome of indulgence. I loved them so much, I even named my childhood cat “fluffy”. To this day, I always keep fluff in my cabinet. Although it doesn’t hold much nutritional value, it can certainly add a fun twist to a boring snack! 

A few weeks ago, I saw a PB & fluff banana bite recipe on Pinterest and it inspired me to create these. With only five ingredients, this simple recipe is a new favorite. Grab some fluff and give it a try!

Ingredients

  • 2 Bananas
  • 2 Tbsps. Marshmallow fluff
  • 2 Graham crackers, crushed
  • 1/4 cup Semi-sweet or dark chocolate chips
  • 1/2 Tsp coconut oil

Instructions

  1. Slice each banana into 10 pieces
  2. Using a knife, spread a small amount of fluff on ten pieces of banana. Top each with another slice of banana. Place banana bites onto parchment paper and freeze until solid (about one hour)
  3. Once frozen, crush the graham crackers until powdered. You can also pulse in a blender or food processor.
  4. Add the coconut oil to the chocolate chips and microwave until creamy and smooth (depending on your microwave, check after 20 seconds, stir, and repeat at 10 second intervals)
  5. Dip each banana bite into the chocolate, covering half of it.
  6. Dip the chocolate coated side of the banana into the powdered graham crackers.
  7. Place each piece back on the parchment paper and freeze until chocolate is solid (about 10 minutes)
