Gut Friendly Banana Muffins

It doesn’t get much better than these gut friendly Healthy Banana Muffins! They’re light, fluffy and packed with nutritious ingredients! They take just minutes to make and are perfect for quick breakfasts and snacks.


Recipe:

  • 1 1/4 cups all purpose flour

  • 1/4 cup ground flaxseed

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 3 large bananas, ripe + mashed

  • 1/3 cup coconut sugar (or swap white sugar)

  • 1 egg, scrambled

  • 1/3 cup butter, melted

  • 4 scoops Vital Proteins Collagen (or unflavored collagen of choice)

Optional:

  • Crushed nuts

  • Dark chocolate chips

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with paper liners.

  2. Sift together the flour, collagen, baking powder, baking soda, and salt; set aside.

  3. Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.

  4. Bake in preheated oven for 25 to 30 minutes. Muffins will spring back when lightly tapped.
