Summer Recipe Series - Hidden Veggie Chicken Burgers

This week, we're continuing our summer recipe series with another delicious burger recipe—this time packed with fresh seasonal produce!

Back when I worked in outpatient oncology, we used to host live cooking demos every Friday. One week, a coworker shared a turkey meatloaf recipe that I absolutely fell in love with. I can't even begin to describe how delicious this meatloaf was. It was tender and juicy on the inside, packed with flavor and easy to make! The secret ingredient….shredded veggies! Since my first introduction to the recipe, I’ve prepared it more times than I can count. It’s become a tried and true staple in our home and I have yet to hear a single complaint from anyone who’s tried it (even those who aren’t big veggie fans)!

The other day I was grilling, and I thought to myself "why can't we do the same thing, but with burgers". And after a bit of tweaking this recipe was born!

If you're like me and struggle with a sensitive stomach, you know that increasing veggies can sometimes lead to more stomach upset. That's why I love incorporating well-cooked veggies into recipes—they're gentler on the stomach and still super nutritious!

Hidden Veggie Chicken Burgers

Serves: 4

Time: 30 minutes

Ingredients:

  • 1 lb Ground Chicken

  • 2 Carrots (medium, shredded)

  • 2 Zucchini (Shredded)

  • 2 stalks Green Onion (chopped)

  • 2 tbsps Bread Crumbs

  • 2 tbsps Barbecue Sauce

  • Four Whole Wheat Buns (toasted)

Optional Toppings: Mixed greens, onion, tomato, cheese, ranch dressing etc.

Instructions:

  1. Preheat the oven to 400ºF (205ºC). Line a baking sheet with parchment paper.

  2. Using a thin cloth, squeeze the carrots and zucchini to remove excess liquid. In a large bowl, combine the ground chicken, carrots, zucchini, onions, bread crumbs, and barbecue sauce. Mix until well combined.

  3. Form the meat mixture into equal patties, approximately four inches in diameter. Place on the baking sheet and cook in the oven for 15 to 20 minutes or until fully cooked, making sure to flip halfway through.

  4. Place the burgers on buns and add toppings of choice - Enjoy!
