Lemon Blueberry Flax Crepes

A twist on a classic, these lemon blueberry crepes will not disappoint!

Growing up I would spend hours picking wild blueberries. I’d return home, blue handed, and start the process of freezing and canning them for the winter. From blueberry jam, to blueberry pancakes and muffins, we enjoyed the fruits of our labor all year round.

Crepes in particular have always been a favorite of mine. So delicious and versatile! Having used blueberries in the filling previously, I attempted to incorporate them into the crepe batter as well. And thus, this recipe was born! The sweet blueberries and tart lemon flavor make for an almost unbeatable combination. The added ground flax not only boosts the fiber content, but also provides a healthy dose of omega 3’s.
