Gluten Free Chicken Nuggets

The most delicious chicken nuggets you’ll ever make! Air fried to perfection and dare I say comparable to Chik-Fil-A?

Made with only four main ingredients [+ seasonings] and ready in under 30 minutes, this fun twist on a childhood favorite has become a go to in our household. 

Since I was given an air fryer as a bridal shower gift, I’ve been obsessed! I’m all about finding healthier ways to make my favorite foods and an air fryer has made that much easier! I love that I can enjoy the ‘crisp’ fried texture of foods without having to actually fry them. If you don’t own one, I highly recommend the investment!

Let’s look at the nutrition stats! Compared to store bought nuggets, this recipe not only lowers the total fat by close to 10 grams, but it almost doubles the protein content and provides a lower carb & lower calorie option! [Child, husband/wife/significant other approved]

Classic (Tyson) chicken nuggets [Per 8 count]:

  • Calories: 432 calories

  • Fat: 27 grams

  • Saturated fat: 6.5 grams

  • Carbohydrates: 24 grams

  • Protein: 22 grams

Verus….

This recipe [Per 8 count]:

  • Calories: 330 calories

  • Fat: 18 grams

  • Saturated fat: 2 grams

  • Carbohydrates: 4 grams

  • Protein: 40 grams

 

Eating healthy isn’t about cutting out the foods we love. But, if we can find a similar, healthier, and just as satisfying recipe, it makes eating healthier that much easier!

Gluten Free & Air Fried Chicken Nuggets

Gluten Free & Air Fried Chicken Nuggets

Ingredients

  • 1 large chicken breast
  • 1 egg
  • Splash of milk (or dairy free milk alternative)
  • ¼ tsp salt
  • ¼ tsp garlic powder
  • 1/8 tsp pepper
  • ¼ cup almond flour
  • ¼ cup walnut ‘flour’**

Instructions

  1. Cut the chicken into ½- ¾ inch pieces.
  2. In a small bowl, add the egg, milk, salt, pepper, and garlic powder. Whisk until well combined.
  3. Meanwhile, combine the almond and **walnut flours.
  4. Spray the air fryer basket with oil.
  5. Dip each nugget in the egg and then dredge in the flour mixture.
  6. Evenly layer the nuggets in the air fryer. Spray them once again with oil.
  7. Air fry at 400 ºF for 10 – 12 minutes. Halfway through, give the basket a quick shake. Nuggets should be golden brown and crispy when they’re done!

Notes:

**To make the walnut ‘flour’, pulse walnuts in a blender until a flour like consistency is reached. 

If doubling this recipe, nuggets need to be air fried in 2 separate batches to ensure a crisp outer coating. Try to avoid stacking the nuggets on top of each other. 

If reheating, air fry for 2 minutes at 400 ºF to crisp back up.
