I love how certain foods or smells can bring back childhood memories. Growing up, I associated cinnamon rolls with a trip to my Nana’s. Like clockwork, my brother and I were awakened to the smell of fresh baked dough and sure enough, cinnamon rolls would be waiting for us on the kitchen table. We would enjoy each other’s company and plot to decide who would be lucky enough to have the center piece. Being a favorite of my dad’s as well, they became a tradition both on his birthday and on Father’s Day. To this day, we still enjoy them frequently on the holidays.

I accidently happened upon this recipe while trying to use up the pizza dough I had in my fridge. I love homemade cinnamon rolls but dread the time and mess it takes to carefully craft the perfect dough. Turns out, pizza dough can be used as a swap when you’re in a pinch for time, or looking for a simpler homemade recipe!

Although I used a sugar substitute for both the granulated and powdered sugars, feel free to swap these for regular sugars if preferred. These delicious bites are also vegan, vegetarian & [can be] dairy free!

Ingredients

  • Small chunk of pizza dough [about 1/6 of store-bought dough for one pizza or 2.5 ounces]
  • Cinnamon & stevia mixture [aim for a 3:1 ratio, I typically use about 3 tsp. cinnamon, 1 tsp. stevia]
  • 2 tbsp. Swerve powdered sugar
  • Splash of almond milk
  • 1/8 tsp. vanilla
  •  Spray oil or 1 tbsp melted butter [can use vegan butter]
  • Flour for dusting

Instructions

  1. Let dough rise according to package instructions.
  2. Dust a surface with flour and roll the pizza dough out thinly.
  3. Use spray oil or butter to cover the surface of the dough.
  4. Sprinkle cinnamon sugar mixture. The specific amount varies based on personal preference. See above.
  5. Starting from the top of the dough, tightly roll the dough downward, forming a log like shape.
  6. Cut the roll into ½ inch pieces and place them into a greased baking dish.
  7. Bake at 350 degrees for 30-45 minutes or until golden brown.
  8. Meanwhile, mix 2 tbsp powdered sugar with 1/8 tsp vanilla and a splash of milk. Mix well!
  9. Drizzle the glaze over the rolls and enjoy!
