Copycat Panera Broccoli Cheddar Soup

Ingredients

  • ¼ cup unsalted butter

  • 2 tbsp avocado oil

  • 1 yellow or white onion, diced

  • 1 cup shredded carrots

  • 2 cups broccoli florets, chopped

  • 2 cups chicken bone broth

  • 1 cup whole milk

  • ½ cup heavy cream

  • ¼ cup all-purpose flour

  • 1 ½ tsp kosher salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • 2 ½ cups shredded cheddar cheese

Instructions

  1. Heat a large pot over medium-high heat. Add the avocado oil, onion, carrots, and broccoli. Cook for about 10 minutes, stirring occasionally, until the vegetables are softened. Transfer the veggies to a bowl and set aside.

  2. In the same pot, melt the butter. Sprinkle in the flour, whisking constantly to create a smooth paste. Stir in the salt, pepper, and paprika for seasoning.

  3. Gradually pour in the bone broth, milk, and heavy cream while continuing to whisk.

  4. Add the vegetables back in. Keep cooking and stirring over medium heat for 10-15 minutes, until the mixture thickens. Once thickened, remove the pot from heat.

  5. Use an immersion blender to puree the soup to your desired consistency! Stir in the shredded cheddar cheese until fully melted and smooth.

  6. Give everything a good stir, and serve warm. Enjoy!
